After a brief hiatus from writing and teaching yoga, I'm feeling good and ready to share. I've got some class updates for you and a recipe for my favorite drink to help you welcome spring.

One of my favorite drinks — an alcohol-free toddy of honey, ginger, and lemon — is a great way to welcome spring. Bright and sunny, this cleansing concoction will put a little pep in your step. Here’s a recipe for you to try.

4” fresh ginger root
1/3 cup honey
6-8 lemons (enough for 1 cup fresh lemon juice)
Rinse ginger thoroughly and cut into 1/2” slices (No need to peel!). In a medium sized pot, add ginger and 3 cups water. Using high heat, bring to a boil and immediately reduce heat to low, simmering until the water is reduced to 3/4 of a cup.
While ginger simmers, juice lemons with a citrus press, reamer, or juicer. Strain juice through a mesh sieve into 16-oz ball jar or glass container with lid.
When ginger water has reduced, remove from heat. Strain juice through a mesh sieve into 16-oz ball jar or glass container with lid. (Tip: there might be enough life in the ginger to make another batch.)
Add 1/3 cup honey to the ginger water and stir to create a honey-ginger syrup.
Store syrup and juice refrigerated for up to 5 days. This recipe makes approximately 4 drinks.
To make a toddy, pour into a mug:
1/3 c ginger syrup
1/4 c lemon juice
2/3 - 3/4 c boiling water
Stir thoroughly and adjust for tartness or sweetness to taste. For additional cleansing kick, sprinkle with a dash of cayenne powder.
In the summer, mix the ginger syrup and lemon juice with ice water for a refreshing lemonade.
